Spiced Apple Jelly Recipe

This spiced apple jelly recipe is the perfect combination of sweet, spicy and tart, making it the ideal condiment for a wide range of dishes, both sweet and savory.

To make the jelly, start by peeling and coring around 3 kg of apples, reserving the scraps and cores. Chop the apples into small pieces, place them in a large saucepan and then add enough water to just cover them. Bring to the boil and then let simmer for around 30-40 minutes until the apples are really soft.

Now, take a piece of cheesecloth and place the apple scraps and cores in the center. Tie it up tightly and add it to the apple mixture. Bring back to the boil and then let simmer for another 10-15 minutes.

Now, remove the cheesecloth and strain the mixture through a fine mesh sieve or cheesecloth, discarding any solids. Measure the resulting juice and for every 500 ml of juice, add 400 g of sugar and the zest and juice of one lemon, together with a cinnamon stick, a star anise, and a few cloves. Bring to the boil, stirring until the sugar dissolves, then simmer for around 20-30 minutes or until the mixture has thickened and reached the setting point.

To test the setting point, spoon a little of the mixture onto a saucer and let cool. If it wrinkles when you push it with your finger, it has reached setting point. Pour the jelly into sterilized jars and let cool.

To make the jelly, start by washing and roughly chopping around 2 kg of sweet apples (such as Golden Delicious). Place the apples in a large pot with just enough water to cover them, and then bring to the boil. Reduce the heat and let simmer, stirring occasionally, until the apples are really soft and pulpy.

Now, take a large piece of cheesecloth and place it over a large bowl or container. Pour the apple mixture into the cheesecloth and let the juice drain out. You should end up with around 2 L of apple juice.

Now, measure the apple juice and for every 500 ml, add around 200 g of sugar. Stir to dissolve the sugar and add a cinnamon stick, a few cloves and the juice and zest of a lemon. Bring to the boil and then let simmer for around 20 minutes or until the jelly has thickened and reached setting point.

To test the setting point, spoon a little of the mixture onto a saucer and let cool. If it wrinkles when you push it with your finger, it has reached setting point. Pour the jelly into sterilized jars and let cool.
